Monday:
- chicken pesto pizza

- nacho salad
- cheesy pinto bean bake
- kale
- mostalada
- corn
- egg salad sandwiches
- coleslaw
- I don't cook on Saturdays. We typically eat leftovers, pancakes, or order take-out.
- roast chicken with mashed potatoes
Maybe I'm just showing my true, ignorant self, but I ain't afraid to ask: what is mostalada?

I'm not surprised that you don't know what it is because my brother and I made it up. It's a cross between enchiladas and baked pasta (we used mostaccoli noodles originally, hence the name). You cook some noodles, stir in some enchilada sauce, black beans, and olives. Top with cheese and bake at 350 for about 20 minutes. Super yummy!
